Lemon-Garlic Chicken with Green Beans

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 5-7 minutes per side, or until cooked through.
  3. Remove chicken from the pan and set aside.
  4. Add chicken broth, lemon juice, and garlic to the pan. Bring to a simmer and scrape up any browned bits from the bottom of the pan.
  5. Add green beans to the pan and cook for 5-7 minutes, or until tender-crisp.
  6. Return chicken to the pan and spoon the sauce over the top.
  • You can add other vegetables to this dish, such as broccoli, asparagus, or zucchini.
  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with a little bit of water and stir it into the pan after adding the green beans.
