Instructions
- Preheat oven to 375-400
- Cut the tops off the bell peppers, remove the seeds and wash. Let them dry
- Cook onion and garlic in olive oil. Add ground beef, salt and pepper, and oregano, and cook until the meat is brown.
- Add tomato sauce and cauliflower rice, and add salt and pepper to taste. Cook for about 2 minutes
- Divide the stuffing between the 4 bell peppers. Place in a baking pan and cover with foil. Bake for about 45-55 minutes.
