- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 bell pepper (any color), cut into chunks
- 1 red onion, cut into wedges
- 1 zucchini, cut into chunks
- 1 broccoli floret, cut into florets
- 1 cup cooked quinoa (rinsed)
- Wooden skewers (soaked in water for at least 30 minutes to prevent burning)
