Sheet Pan Lemon Herb Salmon with Cauliflower Rice and Green Beans

Instructions

  1. Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine olive oil, oregano, basil, garlic powder, paprika, salt, and pepper. Toss cauliflower rice and green beans with the oil mixture until coated. Spread the mixture evenly on the prepared baking sheet.
  3. Place salmon fillets on top of the cauliflower rice and green beans. Drizzle salmon with lemon juice.
  4. Bake for 15-20 minutes for skinless salmon or 20-25 minutes for skin-on salmon, or until the salmon is cooked through and flakes easily with a fork. The cauliflower rice should be tender and slightly browned.
  5. Garnish with fresh parsley before serving.
