Turkey and Mushroom Stir-Fry with Zucchini Noodles

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add the onion and mushrooms to the pan and cook for 3-4 minutes, or until softened.
  3. Stir in the garlic and cook for an additional minute, until fragrant.
  4. Add the zucchini noodles to the pan and cook for 1-2 minutes, or until slightly softened.
  5. In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, sriracha (if using), and ginger.
  6. Pour the sauce mixture over the pan with the turkey, vegetables, and noodles. Toss to coat everything evenly.
  7. Cook for an additional 1-2 minutes, or until the sauce is heated through and slightly thickened.
  8. Season with salt and pepper to taste.
  9. Serve immediately, garnished with chopped green onions.
