Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess grease.
- Add the onion and mushrooms to the pan and cook for 3-4 minutes, or until softened.
- Stir in the garlic and cook for an additional minute, until fragrant.
- Add the zucchini noodles to the pan and cook for 1-2 minutes, or until slightly softened.
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, sriracha (if using), and ginger.
- Pour the sauce mixture over the pan with the turkey, vegetables, and noodles. Toss to coat everything evenly.
- Cook for an additional 1-2 minutes, or until the sauce is heated through and slightly thickened.
- Season with salt and pepper to taste.
- Serve immediately, garnished with chopped green onions.
