Peanut Butter Cookies, No Sugar Added

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream together peanut butter, egg, Truvia and salt until well blended.
  3. Scoop mixture by tablespoon and roll into balls.
  4. Arrange on two ungreased cookie sheets allowing 1 inch for dough to spread slightly as it bakes.
  5. Press down with a fork to flatten, first in one direction and then in another. Sprinkle with the chopped peanuts
  6. Bake for 6 to 8 minutes, until just slightly firm when touched with fingertip.
  7. Allow to cool for 4 to 5 minutes and then transfer to a wire rack to finish cooling
