Instructions
- Heat about 1 tsp oil in a pan over medium heat. Once hot, gently crack the eggs in and cook to your liking.
- Meanwhile, add rocket greens or arugula to a bowl and drizzle the remaining oil and season with sea salt and pepper, then drizzle with a few teaspoons of so of your fresh squeezed lemon juice.
- Toss lettuces to combine, then top with cucumbers, cherry tomatoes, avocado, red onions, cooked eggs, and smoked salmon as shown. Sprinkle with a tiny pinch of sea salt and pepper if desired, then sprinkle with your chopped chives.
