Smoked Salmon Breakfast Bowls

Instructions

  1. Heat about 1 tsp oil in a pan over medium heat. Once hot, gently crack the eggs in and cook to your liking.
  2. Meanwhile, add rocket greens or arugula to a bowl and drizzle the remaining oil and season with sea salt and pepper, then drizzle with a few teaspoons of so of your fresh squeezed lemon juice.
  3. Toss lettuces to combine, then top with cucumbers, cherry tomatoes, avocado, red onions, cooked eggs, and smoked salmon as shown. Sprinkle with a tiny pinch of sea salt and pepper if desired, then sprinkle with your chopped chives.
