First, a bit of terminology clarification.
For me, “weeknight” in a recipe title has a really specific meaning. Because I’m not the kind of person who actually likes to cook on weeknights. However, I’m not always that person who likes to prep food on the weekends either. So weeknight meals are actually a thing in my household. To me a perfect weeknight meal:
Doesn’t take a bunch of effort to prep (in this recipe you have to slice things but that’s not too difficult)
Doesn’t require too many pots and pans (this is all made in one glorious skillet!)
Is ready fast (it’s done in about 35-40 minutes if you work consistently)
