1. Make the Fathead Dough:
- Melt the cheeses: In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring each time, until smooth.
- Combine ingredients: Add the egg and mix well. In a separate bowl, mix almond flour, baking powder, and salt. Gradually add the dry ingredients to the cheese mixture, stirring until a dough forms.
- Knead the dough: Let the dough cool slightly, then knead on a lightly almond-floured surface until smooth.
2. Assemble the Rolls:
- Preheat oven: Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out dough: Place dough between two sheets of parchment paper and roll it into a 10×12-inch rectangle.
- Add filling: Spread Dijon mustard (if using) over the dough. Sprinkle chopped ham and shredded cheese evenly.
- Roll up & slice: Roll the dough into a log, then slice into 1-inch thick rolls.
- Bake: Place rolls cut-side down on the baking sheet and bake for 12-15 minutes or until golden brown.
3. Cool & Serve:
- Cool slightly: Let the rolls rest before transferring to a wire rack.
- Garnish: Sprinkle with fresh chives or parsley if desired.
