1. Blend Ingredients:
- In a food processor or blender, combine cottage cheese, cocoa powder, sweetener, almond milk, and vanilla extract.
- If using protein powder, add it to the mixture.
2. Process Until Smooth:
- Blend until the mixture is completely smooth and creamy. Stop occasionally to scrape down the sides for an even texture.
3. Adjust Sweetness:
- Taste and add more sweetener if needed, blending again briefly.
4. Chill the Mousse:
- Divide the mousse into two small bowls or ramekins. Cover and refrigerate for at least 2 hours to set.
5. Serve & Enjoy:
- Before serving, top with fresh raspberries or sugar-free chocolate shavings if desired.
