  • 1. Make the Dough:

    1. In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring each time, until melted and smooth.
    2. Allow the cheese mixture to cool slightly, then mix in the egg until well combined.
    3. In a separate bowl, mix almond flour, baking powder, and salt. Gradually add the dry ingredients to the cheese mixture, stirring until a dough forms. It will be slightly sticky.
    4. Place the dough between two sheets of parchment paper and roll it into a rectangle (about 10×12 inches).

    2. Assemble the Roll-Ups:

    1. Spread the pizza sauce evenly over the dough, leaving a small border around the edges.
    2. Sprinkle half of the shredded mozzarella cheese over the sauce. Add pepperoni slices or other toppings.
    3. Carefully roll the dough tightly from one long edge to form a log.
    4. Use a sharp knife to slice the log into 1-inch thick roll-ups.

    1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    2. Place the roll-ups cut-side down on the prepared baking sheet.
    3. Sprinkle the remaining mozzarella cheese and any additional seasonings (Italian seasoning, garlic powder, red pepper flakes).
    4. Bake for 15-20 minutes, or until golden brown and bubbly.

    4. Garnish and Serve:

    1. Remove from the oven and let cool slightly.
    2. Sprinkle with grated Parmesan cheese and fresh parsley.
    3. Serve with warm marinara sauce for dipping.
