1. Make the Dough:
- In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring each time, until melted and smooth.
- Allow the cheese mixture to cool slightly, then mix in the egg until well combined.
- In a separate bowl, mix almond flour, baking powder, and salt. Gradually add the dry ingredients to the cheese mixture, stirring until a dough forms. It will be slightly sticky.
- Place the dough between two sheets of parchment paper and roll it into a rectangle (about 10×12 inches).
2. Assemble the Roll-Ups:
- Spread the pizza sauce evenly over the dough, leaving a small border around the edges.
- Sprinkle half of the shredded mozzarella cheese over the sauce. Add pepperoni slices or other toppings.
- Carefully roll the dough tightly from one long edge to form a log.
- Use a sharp knife to slice the log into 1-inch thick roll-ups.
3. Bake:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the roll-ups cut-side down on the prepared baking sheet.
- Sprinkle the remaining mozzarella cheese and any additional seasonings (Italian seasoning, garlic powder, red pepper flakes).
- Bake for 15-20 minutes, or until golden brown and bubbly.
4. Garnish and Serve:
- Remove from the oven and let cool slightly.
- Sprinkle with grated Parmesan cheese and fresh parsley.
- Serve with warm marinara sauce for dipping.
