1. Prepare the Noodles:
- If using zoodles, lightly sauté them in a pan for 2 minutes or microwave for 1 minute to remove excess moisture.
- If using high-protein pasta, cook according to package instructions until al dente, then drain and set aside.
2. Cook the Beef:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add thinly sliced beef, season with salt and black pepper, and cook until browned (about 5-7 minutes).
- Remove from skillet and set aside.
3. Sauté the Vegetables:
- In the same skillet, add 1 tbsp olive oil and sauté the onions, green bell pepper, red bell pepper, and garlic until softened (about 5 minutes).
4. Make the Sauce:
- Pour in beef broth, almond milk, and Worcestershire sauce.
- Stir and bring to a simmer for 3-5 minutes to allow the flavors to blend.
5. Combine Everything:
- Return the cooked beef to the skillet.
- Add zoodles or high-protein pasta and toss everything together.
- Sprinkle in provolone and mozzarella cheese, stirring until melted and creamy.
6. Serve:
- Adjust salt and pepper to taste.
- Garnish with chopped fresh parsley.
- Serve warm and enjoy!
