🍹 Instructions:
1️⃣ Preheat & Prepare
- Preheat your oven to 300°F (150°C).
- Line a baking sheet with parchment paper or a silicone mat.
2️⃣ Separate the Eggs
- Place egg whites in one bowl and egg yolks in another.
3️⃣ Whip the Egg Whites
- Add cream of tartar to the egg whites.
- Using a hand mixer or stand mixer, beat until stiff peaks form.
4️⃣ Mix the Yolks & Cottage Cheese
- In the bowl with egg yolks, add cottage cheese, salt, and honey (if using).
- Whisk until the mixture is smooth and creamy.
5️⃣ Fold the Mixtures Together
- Gently fold the yolk mixture into the beaten egg whites using a spatula.
- Mix slowly and carefully to keep the batter light and airy.
6️⃣ Form the Cloud Breads
- Scoop the batter onto the baking sheet in small mounds (3-4 inches wide, 1 inch high).
- Leave space between each mound.
7️⃣ Bake to Perfection
- Bake for 25-30 minutes until golden brown and firm to the touch.
8️⃣ Cool & Serve
- Let the cloud bread cool for a few minutes before serving.
- Enjoy as is or use it as a bread substitute for sandwiches, toast, or snacks!
