Preheat Oven
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9×13-inch casserole dish.

Brown the Beef
- In a large skillet, cook the ground beef over medium heat.
- Add onion, green, and red bell peppers and cook until softened.
- Drain excess fat.

Season & Add Cheese
- Stir in garlic, salt, pepper, oregano, Italian seasoning, parsley, and paprika.
- Let it cook for 2 more minutes to enhance the flavors.
- Stir in cream cheese until fully melted.
- Mix in ½ cup of Colby Jack cheese and ¼ cup mozzarella.

Assemble the Casserole
- Spread cooked cauliflower rice evenly on the bottom of the casserole dish.
- Top with the ground beef mixture.
- Sprinkle the remaining cheeses on top.

Bake
- Bake for 20 minutes, or until the cheese is melted and bubbly.

Serve & Enjoy
- Let cool for 5 minutes before serving.
- Garnish with fresh parsley if desired.
