Assemble the Pinwheels
- Lay out the low-carb tortillas on a flat surface.
- Spread a thin layer of pesto sauce over each tortilla, leaving a small border around the edges.
- Evenly distribute the shredded chicken on top of the pesto.
- Sprinkle the mozzarella cheese, sun-dried tomatoes, and chopped spinach over the chicken.
- Season with a pinch of salt and pepper.

Roll & Slice
- Carefully roll each tortilla tightly from one end to the other, creating a wrapped cylinder.
- Slice each rolled tortilla into 1-inch sections to form pinwheels.
- Secure with toothpicks if needed.

Air Fry the Pinwheels
- Preheat the air fryer to 400°F (200°C).
- Arrange the pinwheels in a single layer in the air fryer basket.
- Cook for 7 minutes, or until the tortillas are crispy and the cheese is melted.
