Instructions

                1. Assemble the Pinwheels

                  • Lay out the low-carb tortillas on a flat surface.
                  • Spread a thin layer of pesto sauce over each tortilla, leaving a small border around the edges.
                  • Evenly distribute the shredded chicken on top of the pesto.
                  • Sprinkle the mozzarella cheese, sun-dried tomatoes, and chopped spinach over the chicken.
                  • Season with a pinch of salt and pepper.
                2. Roll & Slice

                  • Carefully roll each tortilla tightly from one end to the other, creating a wrapped cylinder.
                  • Slice each rolled tortilla into 1-inch sections to form pinwheels.
                  • Secure with toothpicks if needed.
                3. Air Fry the Pinwheels

                  • Preheat the air fryer to 400°F (200°C).
                  • Arrange the pinwheels in a single layer in the air fryer basket.
                  • Cook for 7 minutes, or until the tortillas are crispy and the cheese is melted.
                4. Serve & Enjoy

                  • Let cool slightly and serve warm.
                  • Enjoy as is or with a side of low-carb ranch dressing or Greek yogurt dip!
