1️⃣ Prepare the Dry Ingredients
- In a large bowl, mix oats, shredded coconut (if using), and white chocolate chips. Set aside.
2️⃣ Make the Lemon Mixture
- In a saucepan over medium heat, melt butter (or coconut oil).
- Stir in sugar, milk, lemon zest, lemon juice, vanilla extract, and salt.
- Bring the mixture to a gentle boil and stir continuously for 1-2 minutes, until sugar is dissolved.
3️⃣ Combine & Form Cookies
- Pour the hot lemon mixture over the dry ingredients. Stir well until fully combined.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Flatten slightly with the back of a spoon if desired.
4️⃣ Chill & Set
- Refrigerate for at least 30 minutes until firm.
5️⃣ Serve & Enjoy!
- Store in an airtight container in the fridge for up to 1 week.
