Instructions

  • 1. Prep the Oven:

    • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • 2. Season and Roast Veggies:

    • Place sliced zucchini, bell peppers, red onion, and mushrooms on the baking sheet.
    • Drizzle with olive oil, sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
    • Roast for 20–25 minutes until tender and slightly charred.
  • 3. Warm the Wraps:

    • Heat wraps in a dry skillet for 20–30 seconds on each side.
  • 4. Assemble:

    • Spread hummus on each wrap, add a handful of fresh spinach, then the roasted veggies, and top with chopped parsley.
  • 5. Wrap and Serve:

    • Roll up tightly, slice in half, and serve warm.
