Instructions

  1. Brown the Beef:
    • In a large pot or Dutch oven, cook the ground beef over medium heat until fully browned. Drain excess fat if needed.
  2. Add Vegetables & Seasonings:
    • Add onion, celery, and bell pepper. Sauté for 5–6 minutes until softened.
    • Stir in chili powder, cumin, garlic powder, salt, pepper, oregano, and sugar.
  3. Mix in Tomatoes & Beans:
    • Add tomato sauce, diced tomatoes (with juice), Rotel, both cans of beans (with liquid), and water if using.
  4. Simmer:
    • Bring to a light boil, then reduce heat and simmer uncovered for 1 hour, stirring occasionally.
  5. Serve & Enjoy:
    • Spoon into bowls and serve with shredded cheese, sour cream, or crackers on top!
