Instructions

      1. 1️⃣ Preheat & Prepare

        • Preheat oven to 375°F (190°C).
        • Halve the zucchinis lengthwise and scoop out the centers to create “boats.”
      2. 2️⃣ Cook the Filling

        • In a skillet over medium heat, brown the ground turkey until cooked through.
        • Stir in taco seasoning and salsa, cooking for 1–2 more minutes until well mixed.
      3. 3️⃣ Assemble the Boats

        • Place zucchini halves on a baking sheet lined with parchment paper.
        • Fill each boat with the turkey mixture and sprinkle cheese on top.
      4. 4️⃣ Bake & Serve

        • Bake for 15 minutes, until zucchini is tender and cheese is melted and bubbly.
        • Remove from oven, garnish with fresh cilantro and diced tomato, and serve warm!
