1️⃣ Preheat & Prepare
- Preheat oven to 375°F (190°C).
- Halve the zucchinis lengthwise and scoop out the centers to create “boats.”

2️⃣ Cook the Filling
- In a skillet over medium heat, brown the ground turkey until cooked through.
- Stir in taco seasoning and salsa, cooking for 1–2 more minutes until well mixed.

3️⃣ Assemble the Boats
- Place zucchini halves on a baking sheet lined with parchment paper.
- Fill each boat with the turkey mixture and sprinkle cheese on top.

4️⃣ Bake & Serve
- Bake for 15 minutes, until zucchini is tender and cheese is melted and bubbly.
- Remove from oven, garnish with fresh cilantro and diced tomato, and serve warm!
