Instructions

    1. 1️⃣ Preheat the Oven

      • Preheat oven to 400°F (200°C).
    2. 2️⃣ Season the Salmon

      • Mix smoked paprika, garlic powder, and onion powder. Rub evenly over each salmon fillet.
    3. 3️⃣ Prepare the Filling

      • In a pan, sauté spinach with 1 tsp olive oil until wilted. Let cool slightly, then mix with grated Parmesan cheese.
    4. 4️⃣ Stuff the Salmon

      • Cut a slit in each salmon fillet to form a pocket. Spoon spinach-Parmesan filling into each pocket.
    5. 5️⃣ Sear the Salmon

      • Heat remaining olive oil in an oven-safe skillet. Sear salmon for 2–3 minutes per side until golden.
    6. 6️⃣ Bake to Finish

      • Transfer skillet to oven and bake for 8–10 minutes or until salmon is fully cooked through.
